Pasta e Fagioli
There must be a zillion recipes for
pasta fazool (as it is called in the Neapolitan dialect). It's genuine
Italian soul food.

1 tablespoon olive oil
1 pound Italian sausage
1 1/2 tablespoons garlic, minced
1 cup water
2 cups chicken broth, fat free, low sodium
1 cup tomato sauce
1 cup shell pasta, uncooked, small

1/2 cup Romano cheese, grated
1 1/2 teaspoons oregano, dried
1/2 teaspoon basil, dried
1/4 teaspoon salt
1/4 teaspoon pepper, freshly ground
2 cans cannelini beans, partially drained
1/4 teaspoon crushed red pepper

Heat the oil in a large saucepan over medium-high
heat. Add the garlic and sausage. Saute until the sausage is browned,
stirring to crumble.
Add water, broth, and tomato sauce and bring to a
boil.
Stir in pasta, 1/4 cup cheese, oregano, basil,
salt, pepper, beans, and crushed red pepper and bring to a boil.
Cover, reduce heat and simmer for 8 minutes or
until the pasta is done.
Let stand 5 minutes.
Serve in bowls and garnish with remaining cheese.
